It’s not all about eating out on Valentine’s Day, some of us love to make a yummy home cooked meal for our other half and we have some super simple recipe’s to help you out, starting with delicious stuffed peppers followed by creamy carbonara and a mouth watering no bake chocolate cheesecake to finish.

 

Starter

Stuffed Peppers

Ingredients:

  1. 2 large peppers, halved, stalks removed and deseeded
  2. 1 medium sized onion, peeled and diced
  3. 1/2 tin of chopped tomatoes
  4. tomato purée
  5. 1/2 cup of rice – or 2 minute microwave packet rice to make things super simple
  6. beef mince
  7. cheddar cheese
  8. paprika, salt and pepper

Directions

  1. Put the peppers in the oven (Gas mark 4/180°C)
  2. Cook rice – add rice to a pan of boiling water, simmer until soft. Or if you have packet rice simply tear off the top and add it to the microwave for 2 mins, simple!
  3. Add onion to the frying pan, fry for a couple of minutes then add half a pack of minced beef, fry until brown
  4. Add half a tin of chopped tomatoes and teaspoon of tomato purée
  5. Add a teaspoon of paprika and salt & pepper to taste
  6. stir in rice and add cheese – add as much or as little cheese as you wish
  7. Put the mix into the peppers and leave in the oven until the peppers are soft and serve

 

 

Main

Spaghetti Carbonara

Ingredients:

  1. pound spaghetti or linguine
  2. strips of chopped bacon
  3. egg yolks
  4. cup grated Parmesan
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon black pepper
  7. 1/2 cup fresh, chopped parsley
  1. Cook Pasta –  Dependant on pasta choice, follow packet direction. This will usually consist of adding pasta to a pan of boiled water and leave to simmer for around 10-15 minutes.
  2. Meanwhile, fry the bacon in a frying pan over medium heat until cooked to preference. Remove the bacon from the pan onto a paper towel and keep leftover oil in the pan.
  3. In a large bowl, whisk the egg yolks. Continue to whisk and add 2 tablespoons of the leftover oil from the frying pan. Working quickly, add the drained pasta (ensure it is still hot) and Parmesan to the yolk mixture and toss to combine. Add the salt & pepper, parsley, and bacon.(The heat of the pasta cooks the eggs, but not thoroughly. It may be advisable for young children, the elderly, and anyone with a compromised immune system to avoid eating this dish.)
  4. Serve immediately.

 

 

Dessert

No Bake Chocolate Cheesecake

Ingredients:

  1. 150g crushed digestive biscuits
  2. 45g butter, melted
  3. 110g caster sugar
  4. 120ml whipping cream
  5. 150g melted and cooled dark chocolate
  6. 2 tbsp cocoa powder
  7. 200g cream cheese

Directions:

  1. Add crushed biscuits and butter to a bowl with 1 tablespoon of the sugar. Stir and add to a cake tin. Press the mixture to the bottom of the tin until firm and smooth then refrigerate
  2. Whip the cream until soft peaks form and add the cooled melted chocolate and cocoa powder then mix
  3. In a separate bowl beat the cream and remaining sugar together. Then fold the cream-chocolate mixture and cream cheese mix thoroughly together. Ensure that the mix is fully blended.
  4. Spread the mixture on top of the refrigerated biscuit base and put back into the fridge for at least one hour to set, then serve.
  5. Optional – add strawberries, raspberries & chocolate sauce for an extra special touch.
